Carved from stainless steel, the Virobloc consists of two parts: a fixed part and a sliding part. Only on the sickle part No. 10 is it possible to lock the blade in the open position.
How to open an oyster with the Opinel knife?
Before proceeding with opening:
Make sure you buy unopened oysters in the original packaging with a label indicating the expiration date.
Open the oysters at the last minute, just before consuming them.
Throw away the first water: in the minutes following its opening the oyster releases purer and tastier water.

Concave or flat oyster?
The flat oyster is the one originally found on the French coasts. Today it is rarely produced. In Brittany it is also called "belon" and the "pied-de-cheval" variety corresponds to the largest one.
The concave oyster is the most widespread. Having arrived in France in the 19th century, it was of Portuguese origin until its decimation in the early 1970s. It has been replaced by an oyster of Japanese origin.
Method of opening flat oysters with the 09 Opinel knife:
1) Wash the oysters with a brush under running cold water.
2) Grip firmlythe Opinel N. 09 for oysters, placing your fingers far forward on the blade; the tip must go beyond the thumb and index finger by 1 to 2 cm.
3) Insert the blade at the hinge, pushing the oyster against the blade and not vice versa.
4) Cut the zipper with a twisting motion
5) Sever the muscle
6) Lift and detach the upper shell
